My Favourite Pancakes.. and they are easy! I promise!

I stumbled upon this recipe in a scramble to find something quick and easy to satisfy my pancake craving and its been a favourite ever since. I’ve made a few modifications to make them just the way I want them and I recommend you do the same. This recipe will make 5 large, incredibly fluffy pancakes.


1 1/2 cups all-purpose flour
zest from half a lemon
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons melted butter


1. Preheat oven to 170, and place a plate or baking tray inside
2. Whisk together the dry ingredients in a large bowl and make a well in the center
3. Place a lightly oiled pan on over medium high heat
4. Whisk together the wet ingredients and pour into the well you made in the dry ingredients
5. Stir together with a wooden spoon leaving some bumps and lumps in the batter
6. Using a ladle pour the batter into the center of the hot pan
7. Flip when edges start to lightly brown and air bubbles come up through the batter
9. Place the cooked pancakes on the plate or tray in the oven until you have finished the batter
10. Enjoy!!

At our house these babies last about 5 minutes
